Would be interesting to see some resistance/HIIT sessions with each variation in the diet, and see how much that influences things over time.

Haha I think that would just make it even more confusing. Pretty sure both resistance and HIIT training increase water retention in the short term, like my sunburn did. They might lead to retaining/adding more muscle mass over time though so probably net positive even if they make the signal jump up/down more.
