Haha this mirrors my experience with a ton of foods, and I use exactly the same strategy - all or nothing. Nuts + cheese are maybe the worst for me, but pretty much all meat, too.
I have eaten 10-12 eggs in one sitting, but really only when I was doing carnivore and was sick of meat. I think a "normal" portion of eggs is maybe 3-6 for me, which would be a little high if done daily, but I think 1-2 daily are probably fine?
That said, I haven't eaten eggs ad-lib in over a year. I think I had a few over the holidays when I was off the diet.
